Collection: Honey

 

Our honey is usually harvested from the hives that we manage ourselves in the Norfolk Broads.  Occasionally we may jar other local guest honeys from other small producers which we've tasted and want to share with you.  Because we are a small business, availability will come and go, but you can always send us a message to ask when we'll next have stock and get on the waiting list!

We do two main honey 'pulls' a year.  The first will be in early May for the spring honey.  This will normally go through a process using a special machine to create a Soft Set Honey.  Where we farm there is usually quite a lot of oil seed rape which the bees love. OSR can cause the normal granulation process of honey to happen really fast.  In days, rather than weeks.  To keep a smooth and consistent product we use a creaming process that makes a soft set variant.  It's great for spreading on toast without making the toast go soggy! 

After that we leave the bees to get on with their summer forage which creates our Wildflower Honey.  That honey will be harvested at the end of August and is normally a runny honey.  This will change colour and flavour each year as the forage varies around the apiaries.
